Jaggery Block

Solidified from fresh sugarcane juice, jaggery blocks retain natural molasses, offering a rich caramel flavor. Used in sweets, Ayurvedic remedies, and cooking, they store well and add warmth to tea and desserts.

Jaggery Cube

Compact and bite-sized, jaggery cubes are perfect for snacking, curbing sugar cravings, and aiding digestion. They are easy to store and enhance everyday cooking and beverages.

Jaggery Powder

Finely granulated for convenience, jaggery powder dissolves easily in tea, coffee, smoothies, and baking. It retains nutrients and is popular in Ayurvedic medicines and energy drinks.

Jaggery is an unrefined sugar product made in Asia and Africa.

It’s sometimes referred to as a “non-centrifugal sugar,” because it’s not spun during processing to remove the nutritious molasses.

Similar non-centrifugal sugar products exist all over Asia, Latin America and the Caribbean, although they all have different names (1).

Jaggery Making Process

1. Sugarcane Cultivation (Organic Farming)

“Only organically grown sugarcane is used, without synthetic fertilizers or pesticides. The sugarcane is harvested at peak maturity for the best juice yield and sweetness.”

2. Extraction of Sugarcane Juice

“Fresh sugarcane is washed and crushed using mechanical crushers to extract juice. The extracted juice is filtered using cloth or natural sedimentation to remove dirt and fibers.”

3. Clarification (No Chemicals Used)

“The juice is boiled in large open pans over a slow wood or bagasse (sugarcane residue) fire. Natural clarifying agents like ladyfinger plant extract are used to remove impurities. (No chemical additives like sulfur or phosphoric acid are used, unlike refined sugar production.)”

4. Boiling & Concentration

“The juice is continuously stirred while impurities are skimmed off. As it thickens, it turns golden brown, indicating caramelization. The boiling process takes 2-3 hours, depending on the moisture content and heat level.”

5. Cooling & Molding

“Once the liquid reaches a semi-solid consistency, it is poured into molds or trays to cool and solidify.<br>It is shaped into blocks, powder, or granules, depending on the requirement.”

6. Drying & Packaging

“The jaggery is left to dry naturally to reduce moisture content, ensuring a longer shelf life. It is then packed in air-tight, moisture-proof packaging to prevent spoilage and maintain freshness.”
